375°F for 15min in toaster oven, light coating of oil and spice same as you would in air fryer.
Remove steaks and roasts from the refridgerator and allow to sit at room temperature for 30-60 minutes. This will allow more even cooking of the meat.
Steak
Cook steak on the BBQ, in the oven, or frying to the following temperatures for desired doneness:
120°F (48.8°C) = Rare
130°F (54.4°C) = Medium Rare
140°F (60°C) = Medium
150°F (65.5°C) = Medium Well
160°F (71.1°C) = Well
Roast
Apply rub while waiting.
Cook on a rack above a shallow, foil lined pan, fat side up at 350°F for 15-30 minutes per pound. Cook until meat or instant read thermometer reads 135°-140° when inserted into the center.
Remove and let stand for 20 minutes. Temperature will rise another 5°-10° while resting (cover losely in foil).
Next time - try preheat oven to 450°F. After applying rub, place roast (4lb) in a shallow roasting pan fitted with a rack. Roast for 15 minutes, then reduce oven to 325°F. Roast approximately 1 hour for medium doneness (135-140°F).
Remove and let stand for 20 minutes (cover losely in foil). Carve thinly against the grain.
Rub
To taste using: Salt, pepper, sugar, garlic powder, onion powder, oregano, Cajun, thyme, rosemary, chili powder, ???.
Tested - salt, pepper, sugar, garlic powder, onion powder, thyme, chili powder. 1 Tsp. of each for 3.5lb roast. Try 1 1/2 Tsp. next time for better coverage.
Cook all chicken until instant read thermometer reads 165°F
Boneless breasts
25 minutes @ 400°F
Pounded breasts
400°F for 12 minutes, then flip for 8 minutes more, or just for 22 minutes.
Boneless thighs
20 minutes @ 425°F
Chicken Wings - raw with marinade
60 minutes @ 375°F
Marinating Chicken
1-2 hours will work for most cuts, boneless or bone in.
Bone in thights or wings can be marinated from 1-6 hours.
415°F for 10-15 minutes Panko/Parmesan crust (salt, pepper, parsley, Mrs Dash herb & garlic)
Pre-heat oven to 325°F. Place face down, cover with lid or foil. Cook for 12-15min per pound.
Cook until at least 145-150°F internal temperature.
Pork Loin
Oven - 425°F for 20-30 minutes.
BBQ - Prepare the grill for direct cooking over medium heat (350° to 450°F).
Grill the pork over direct medium heat, with the lid closed as much as possible, until the outsides are evenly seared and the centers are barely pink.
Cook 15-20 minutes, turning every 5 minutes.
When internal temperature of the tenderlions is 150°F remove from the grill and let rest 3-5 minutes.
Baked
Use russets, wash and scrub clean, dry, poke with a fork to release steam, wrap in foil. Can also cut in half and season in the middle (butter, oil, garlic, ???).
Set oven to 400°F and bake 40-60 min until tender inside (squeezable with oven mitt, or fork tender).
Can microwave on high for 5min before wrapping in foil to cut down on oven time.
Oven Roasted
Cut 3-4 potatoes in wedges, mix with 4tbsp olive oil, 2tsp salt, 2 tsp garlic powder, 2tsp italian spices.
Spread one layer thin on foil or parchment lined pan. Sprinkle with 1/2cup of paremesan.
Set oven for 375°F and back for 25-35 min.
Also try adding some cayenne or some dill.
Rinse 3-5 times until water is clear.
Soak for 20-30 minutes.
Cook according to package instructions. Ie. bring to a boil, cover, reduce heat fot minimun for ~17minutes.
Remove from heat and let stand for 5 minutes, stir with a fork to fluff.
Rest at room temperature 20+ minutes.
Pre-heat oven to 425°F
Rub with oil, sprinkle with salt and pepper or spice of choice, or
Marinate with Teriyaki sauce for up to 1 hour skin side down.
Cook for 4-6 minutes per 1/2" thickness. If 1" thick check after 8 minutes.
Salmon is cooked when it is opaque and flakes with a fork, or is at 145°F internal temperature.
